THE DEPARTMENT
The Food and Beverage Management Department offers a Culinary
Arts Management degree and also provides hotel management majors with
a basic background in food
and beverage operations, which is fundamental to all aspects of the hospitality
industry. The department offers an array of food and beverage courses. It also
offers a major in Beverage Management. Course instruction includes hands-on laboratory
experience and extensive interaction with the food and beverage industry as well
as traditional classroom lectures and demonstrations.
Four food and beverage courses are in the hotel degree core: FAB 101, FAB 159, FAB 160, and FAB 461. However, the Food and Beverage Department allows a hotel administration major to major in food service management by following the program requirements. Electives provide opportunities for students to specialize in multiple areas of the food and beverage industry such as fine dining, casual table service restaurants, catering, hotel food and beverage operations, recreational food services, non-commercial food services, and beverage operations.
The Food and Beverage Department has 13 full-time faculty and a cadre of adjunct faculty. Other positions within the department include a director of the Culinary Arts Program, a director of Purchasing and Special Events, an accountant, a kitchen manager, graduate assistants, teaching assistants, student workers and a department secretary.
The department operates the Boyd Dining Room, the Southern Wines & Spirits Lounge and has three kitchens: one production, one demonstration and one lab. The Boyd Dining Room can accommodate up to 180 seated and is divisible into three sections with air walls. The Dining Room opens to the public for lunch and dinner during the semester and is available for banquets in the evenings and on the weekends.
